Demerara Sugar is a gourmand note that captures the rich, caramelized warmth of raw golden sugar crystals. Its scent is sweet, toasted, and buttery, with nuances of molasses, vanilla, and toffee. Used as a heart or base note, it brings cozy indulgence to gourmand and amber compositions, evoking patisserie sweetness without being cloying. It pairs beautifully with vanilla, tonka, coffee, and spice accords for a golden, edible warmth.

History & Production: Although real Demerara sugar is not used in perfumery, the accord is created using synthetic molecules such as ethyl maltol, furaneol, and coumarin blends to mimic the scent of slowly cooked sugar crystals. This gourmand effect became popular during the gourmand fragrance boom from the 1990s onward, adding richness to compositions without tipping into cloying territory.
